  1. Great recipe! Great channel! Just a helpful tip from a fellow cook, the sauce broke and that's likely due to the intense heat and leaving it cooking for too long. Get your ingredients incorporated, and then when you get that beautiful, silky sauce (after you've added the cold butter) immediately take it off the heat, and THEN add your basil. You'll get the slight wilt that you want, and the sauce will remain slightly opaque, creamy, and will be a more enjoyable eating experience (as well as more aesthetically pleasing). Reminds me of Carabba's Chicken Brian, which is my favorite dish!
