Ingredients (makes 8 servings):

4 large eggs
1 cup coconut milk (240 ml / 8 fl oz)
¼ cup granulated Erythritol or Swerve (50 g/ 1.8 oz)
1 cup almond flour (100 g/ 3.5 oz)
½ tsp vanilla powder or 1-2 tsp unsweetened vanilla extract
⅛ tsp salt
2 tsp ghee or coconut oil for greasing
2 cups fresh or frozen berries: blackberries, raspberries and blueberries (300 g/ 10.6 oz)
1 tbsp powdered Erythritol or Swerve for dusting

  1. excellent video – love the simplicity, clarity, and beauty of the presentation. I have one question, is the coconut milk the from the can or the drinkable type (that replaces cow's milk or almond milk, etc. as a drink). I usually assume that in recipes coconut milk means the real deal, full test, generally in a can. But I want to be sure. thanks.
