This is a great low sugar, or shall I say no sugar snack that can help you with your weight. Having these around the house can fulfill that craving and keep you on track.

**There is a typo in the video – “chocolate chip cookies” – should say chocolate chips

*One bag (9-10oz) of sugar free chocolate chips in a double boiler.
(that’s a pot, resting in another pot with a little boiling water in it.)
*1 Tablespoon of coconut oil.
*1 jar (16oz) of sugar free peanut butter (with or without nuts)

*Top pot should be ABOVE the water, not touching boiling water.
*Melt, stirring frequently until smooth then turn off heat.
*Keep stirring and little lumps will melt quickly.
*Add pinch of salt
* Add in Almond flour until thick and does not stick to spoon.
(Amount will vary depending on how oily your peanut butter is.)
*Spoon in small amount of melted chocolate onto bottom of mold.
*Add about 1 rounded tsp of peanut butter mixture into mold.
*Press down so peanut butter not above top of mold.
*Spoon in more chocolate to cover peanut butter.
*Drop mold a few times to push out air.
*Put in freezer for about 15-20 minutes. Then store in plastic container, in fridge!
*Hide them if you want any tomorrow!!

  2. instead of 10oz of chocolate chips could I substitute 100% unsweetened cocoa powder or would it taste different Also could you share the macros on this. it looks like good fat bomb for a keto diet.

  3. I messed up big time and ordered 3 lbs of cacoa nibs! I thought I could melt them down and looked online and it seems I need a process to do that. I think I saw the raw cacoa and then it stuck in my mind. :(

  5. I am surprised, that he recommended penaut butter, in my opinion is it quite unhealthy, it contains sugar and palm oil or something like that. Why not use peanut paste with 100% peanuts without any additions?

  6. I just made these tonight after the cauliflower pizza. These are very tasty and guilt free! I used stevia sweetened chocolate chips, and unsweetened creamy peanut butter. These are simple to make when you get in the mood for something a little sweet but something that isn't bad for you.

  7. Hi Karen and Eric,   I made 48 of these last night. I used a tiny-muffin tin and it worked great. They are delicious. I forgot the pinch of salt….and I hope blanched almond flour is ok? Thank you very much for sharing this. These will help me eliminate all the unnecessary sugary sweets.

  8. Anybody else notice that this recipe says to melt chocolate chip cookies? lol 😀 ^_^ Be careful with sugar free chocolate chips, friends…. they almost always have malitol in them which can lead to painful gas and many visits to the throne room.
