Eating Keto 33: Berry Cheesecake Fat Bombs

➞ Ingredients (makes 8):

¼ Cup Butter (I used 60g/4 Tbsp)
1 Cup Cream Cheese (I used 240g/16 Tbsp)
5 Tbsp Sweetener (I used Truvia)
1 tsp Vanilla Extract
½ Cup Frozen Mixed Berries (I used 85g Cup)
¼ Cup Water

➞ Directions:

1. Add butter and cream cheese to a medium bowl for approx. 1 hr for the butter to reach room temperature and is soft enough to beat. *Don’t melt the butter!
2. Once softened, beat butter and cream cheese until smooth.
3. Add sweetener and vanilla extract to bowl.
4. Using a small sauce pan, add frozen berries and water over medium heat. Let them simmer until softened and set aside to cool.
5. Measure ½ Cup of the berry mixture into the cream cheese mixture and beat until combined.
6. Evenly divide mixture into 8 mini cupcake tins (or other molds) and place in the freezer until set (a few hrs-overnight)

  1. Watching over a year…you are my favorite LCHF channel to get some awesome recipes…I do turn down the audio as you like me over talk the steps..less is more….but you are the best and all your tips/creations are delicious and help out with our sweet tooth and main dishes etc…Keep on going..

  2. I tried this recipe 🙂 But instead of mix berries, I used strawberry. I tasted it before I put it in the mold, and it tasted FANTASTIC! I used Erythritol instead of Stevia. Even my daugther loves it! Thank you and GOD bless!

  3. Maybe it's just me – but the batch I made were the MOST horribly gross things ever. I'm sooo sad about it too, because I LOVE cheese cake. I used liquid Stevia instead of the powdered Truvia. I think between that and the berries I used – made my batter more wet. I ended up with 34 mini muffin Bombs instead of the 20 mentioned. Although mine were a complete fail, thank you so much for all recipe vids, they're awesome.

    I know what you mean about the fat bombs! So yummy 🙂

    We'll since everyone's macros are different, I think the 'best' thing I could do is post more 'Full Day of Eating' videos to show different ideas and how I manage to hit my targets on keto. I know what you mean about your protein going over (Sometimes struggle there too since most things like cheeses and whatnot have fats and proteins tagging along)

  5. Oh my WOW. I just finished making these and I think I consumed one fat bum just by licking the spoon in the bowl alone. Those are delicious and I will definitely make them again. My choice over the chocolate ones for sure.

    On a sidenote-have you ever considered doing a video on macros? I'm four days in to the ketogenic diet and I'm struggling to pick foods where I use the calories I need a day for weight loss while trying to get the amount of fat I need to be consuming and keeping it under 20 g of carbohydrates per day. I find that my calories are usually lacking but my proteins are going over. Any tips or tricks to help newbie along the way? Thank you in advance I really appreciate your channel I can't wait to try more of your recipes. I have many of them bookmarked!

  7. Is there any way that we can get some savory recipes?  I am very lucky from the standpoint that I do not have a sweet tooth so all of your sweets recipes are being wasted on me! I loved your videos on the pizza bagels and the bulletproof coffee.

  9. +Spinnlein Balfouri (doesn't let me reply/tag you) – Hey! I think it should work fine in paper cupcake liners/regular muffin tin – May want to spray the muffin tin if you're not using liners and it's a metal one though (may be hard to get out)

  10. One step you can eliminate is to cut up the butter and cream cheese into a lot of small pieces, then you just put it in the microwave for about 10 seconds to bring to room temp. 🙂 I've done these and cream cheese pancakes too.
