Recipe:
1-2 Tablespoons melted butter or coconut oil
2 eggs
2 teaspoons coconut flour (adjust as needed)
1/2 teaspoon baking powder

Beat eggs into melted butter or oil. Add coconut flour and baking powder and mix well.

Pour into a microwave safe bowl that will provide a good shape for your bread when complete. Place a plate under your container just in case it overflows.

Microwave on high for 1:30 – 2:00, it will be firm and spongy.

When it has cooled enough to handle, run a knife around the edges and turn out onto a plate. Cut into desired size. Toast, and add your favorite toppings.

You can substitute flax meal or almond flour in place of the coconut flour, it will take about 2 tablespoons rather then the 2 teaspoons of coconut flour.

  3. I used yellow egg beaters. First try, I made a great tasting omelet. Second try, I added enough coconut flour to make the mixture more custard-like in texture. Enjoying it now with soup. Thank you!

  4. that looks kinda gross :/ im sure that with a pinch of salt and some seasonings, baked in an oven for 20 minutes would be much better. I cant believe people put recipes with microwave on youtube… its disgusting.

  5. Thanks so much for sharing…. really cool idea. I would like to try to bake this IN A MUFFIN TOP PAN, I just purchased. Would make great buns. I might experiment and add half coconut flour and half almond flour to darken the color so my husband might give it a try. Wondering if toasting it in a toaster too would be more appealing to my husband…? Glad you are doing what works for you!!!!! Best of luck on your health quest!   7. This is great, I'm low carb, and my local market just got some coconut flour in and I bought what they had, ( 4 bags) I don't have almond flour yet, I haven't tried any low carb bread yet. Do you know where i can buy large bags of coconut flour at a good price, online? Thanks so much.

  8. I made this in the toaster oven and it barely rose and tastes like eggs and coconut. Not good. If you add sweetener it could be a dessert cake, but not good for bread because of the taste.
